RED CABBAGE APPLE PISTACHIO AND CRANBERRY ENJOY DAN:

RED CABBAGE APPLE PISTACHIO AND CRANBERRY by CHEF DAN:
Serves 4

SALAD INGREDIENTS:
1/2-head cabbage, thinly sliced with a mandolin slicer
2 Granny Smith apples, peeled and chopped
1/2-cup pistachios
1/4-cup dried tart cranberries
1/4-cup craisins
1 teaspoon sea salt
1 teaspoons Siracha Sauce

DRESSING INGREDIENTS:
2 tablespoons black truffle oil
1 tablespoon EACH balsamic vinegar, and lemon juice
4 teaspoons pure maple syrup
Pinch of salt and pepper to taste
1 teaspoon poppy seeds
1/3-cup crumbled feta cheese

DIRECTIONS:
1.   Place the thinly sliced cabbage, and apple in a bowl.
2.   Add pistachios and next 5 ingredients mix well to combine.
3.   Whisk together truffle oil and next 5 ingredients to make the dressing.
4.   Add the dressing to the salad bowl and mix to combine.
5.   Top with feta cheese.
