CABBAGE AND APPLE SOUP FOR THE SUP KITCHEN ENJOY DAN!!

        CABBAGE AND APPLE SOUP FOR THE SOUP KITCHEN by CHEF DAN:
Serves 30-40

INGREDIENTS:
1 tablespoon caraway seeds
1/2-tablespoon EACH fennel seeds, and cumin seeds
1/4-cup olive oil
5 onions, chopped
6 carrots, chopped
5 stalks celery, chopped
5 cloves garlic, minced
15 cups vegetable broth
5 heads cabbage, thinly sliced
20 apples, sliced
5 tablespoon apple cider vinegar
1 quart apple juice
4 tablespoons paprika

DIRECTIONS:
1.   Heat a dry skillet over medium-heat.
2.   Add caraway, fennel and cumin seeds, cook 2 minutes, stirring constantly.
3.   Place in a spice grinder, process until light ground powder.
4.   Heat oil in a stock pot over medium-heat and when sizzling.
5.   Add onions, carrots, celery and garlic: sauté for 8 minutes.
6.   Add spices and sauté for 30 seconds, stirring constantly.
7.   Increase heat to medium-high, add broth and bring to a boil.
8.   Add cabbage and next 5 ingredients.
9.   Cover, reduce heat and simmer for 40 minutes.
