VEGETABLE ZOODLE SALAD ENJOY DAN:

                VEGETABLE ZOODLE SALAD MY WAY b CHEF DAN:
Serves 4

DRESSING:
1 thumb-size fresh ginger, grated
2 tablespoons olive oil
2 tablespoons sesame oil
1 tablespoon almond peanut butter
1 teaspoon raw Blue Agave
1/2-teaspoon light soy sauce
1 tablespoon lime juice
Sea salt and freshly ground black pepper to taste

SALAD:
2 zucchini, spiralized
2 carrots, spiralized
1 cucumber, spriratized
1 apple, spiralized
6 cherry tomatoes, halved
1 bell pepper, julienned
1 scallion, thinly sliced

DIRECTIONS:
1.   Place all spiratized vegetables in a salad bowl
2.   Add cherry tomatoes, bell pepper and scallion.
3.   In a blender place all dressing ingredients.
4.   While blending add olive & sesame oil; blend until emulsified.
5.   Drizzle over the salad ingredients:
