CHICKEN ZUCCHIN ZOODLES WITH SPICY PEANUT SAUCE ENJOY DAN:

CHICKEN ZUCCHINI ZOODLES WITH SPICY PEANUT SAUCE
                                                                                              By CHEF DAN:
Serves 3-4

INGREDIENTS:
1 tablespoon grape-seed oil
1-pound chicken tenders
1-tablespoon grape-seed oil
1 onion, diced
2 zucchini, inspiralized
1 carrot, inspiralized
1 red pepper, inspiralized
1/2-cup bean sprouts
1/2-teaspoon EACH dried basil, dried oregano, and dried thyme
4 scallion, bias sliced into 1/2-inch lengths
Handful fresh cilantro, diced
Toasted sesame seeds for garnish

SPICY PEANUT SAUCE:
1 garlic clove, minced
4 tablespoon almond peanut butter
1 tablespoon lime juice
3 tablespoons coconut aminos
1/2-teaspoon ground ginger
1 teaspoon Sriracha sauce

DIRECTIONS:
1.   In a bowl, whisk together all spicy peanut sauce ingredients. Set aside.
2.   Heat 1 tablespoon oil in a skillet over medium-high heat when sizzling.
3.   Add chicken tender and sauté for 3-4 minutes.
4.   Remove from heat and let sit. Dice when cool
5.   In the same skillet add remaining oil, over medium-high heat hen hot.
6.   Add onion, zucchini zoodles, and zoodles carrots, stir-fry 2 minutes.
7.   Remove zoodles and place in a bowl along with chicken, and next 6 ingredients:
8.   Add spicy peanut sauce and toss till all zoodles aer coated.
9.   Top with toasted sesame seeds.
