WHOLE CHICKEN ROASTED WITH HONEY AND WORCESTERSHIRE ENJOY DAN:

WHOLE CHICKEN ROASTED WITH HONEY AND WORCESTERSHIRE SAUCE

INGREDIENTS:
5 pound whole chicken, washed and dried
2 tablespoons EACH olive oil and butter
2 tablespoons Worcestershire sauce
4 tablespoon honey
2 spring rosemary
4 garlic cloves, minced
2 tablespoons Meyer lemons juice
1 Meyers lemon, sliced
Sea salt and freshly ground black pepper
Cavity stuffing, slice Meyer lemons, sliced onions, springs of rosemary

DIRECTIONS: (preheat oven to 425 F)
1.   Add olive oil and next 6 ingredients in a bowl.
2.   Stir to combine and set aside.
3.   Season chicken with salt and pepper, including inside the cavity.
4.   Stuff the chicken with lemon slice, rosemary and onion.
5.   Place the chicken in a roasting pan.
6.   Baste with olive oil mixture and bake 45 minutes.
7.   Baste again and bake another 15 minutes.
8.   The skin wills a deep dark brown.
9.   Let rest 15 minutes before serving.
