WONTON SOUP

Serves

INGREDIENTS:
6
cups chicken broth
1/4-cup
soy sauce
3
tablespoons red wine vinegar
1
teaspoon fresh ginger, minced
1
tablespoon sesame oil
1/2-teaspoon
EACH, siracha, and mirin
16-frozen
dumplings (sold at Costco or Trader Joe’s)
7-crimini
mushrooms, sliced
1-Fresh
bok choy, sliced
1
(8 Oz) package rice noodles
Garnish
with hoisin sauce and fresh cilantro
DIRECTIONS:
1.
Pour
boil water over rice noodles and let stand hot water for 20 minutes.
2.
After
20 minutes drain and set aside.
3.
Bring
broth and next 6 ingredients to a boil in a stock pot.
4.
Whisking
occasionally.
5.
Add
frozen dumplings, mushrooms, boc choy to the boiling broth.
6.
Then
let simmer 3-4 minutes or until dumplings are warned through and bok choy is
wilted.
7.
Divide
noodles between 4 bowl and cover with equal parts of wonton soup.
8.
Garnish
with drizzle of hoisin sauce and fresh cilantro.
