CABBAGE SALAD WITH MISO VINAIGRETTE ENJOY DAN:


              CABBAGE SALAD WITH MISO VINAIGRETTE by CHEF DAN:
Serves 4

INGREDIENTS:
3 tablespoons rice wine rice vinegar cabbage salad miso vinaigrette
2-tablespons white miso paste
1 tablespoon EACH olive oil, and toasted sesame oil
2 teaspoons EACH soy sauce, and pure maple syrup
2-garlic cloves, thinly sliced
2-tablespoons fresh ginger, peeled chopped
1-onion, thinly vertically sliced
1/2- Napa cabbage, coarsely chopped
1/2-red cabbage, coarsely chopped
1-daikon radish, peeled, halved lengthwise, and thinly sliced
1/4-EACH teaspoon salt, and black pepper
1/2-cup roasted cashews
1/4cup toasted black sesame seeds
1/2-cup fresh mint
1-avacodo, sliced

DIRECTIONS:
1.   Combine the first ingredients in a bowl.
2.   Whisk together.
3.   Combine both cabbages onion, and radish in a bowl.
4.   Add vinegar mixture, salt and pepper to the cabbage mixture.
5.   Toss well to coat.
6.   Sprinkle sesame seeds, cashews, and mint over the salad.
7.   Place sliced avocado on top.
