SWEET POTATO AND KALE by CHEF DAN:
Serves

INGREDIENTS
2
sweet potatoes, peeled and diced into 1-inch pieces
1-1/2tablespoon
olive oil
1
onion, diced
2
garlic cloves, minced
1/2-teaspoon
EACH chili powder and turmeric
1
bunch kale, chopped
1/3-cup
walnuts
Salt
to taste
DIRECTIONS:
1.
In
a skillet over medium-heat.
2.
Add
sweet potatoes and few tablespoons water.
3.
Cover
with a lid, and steam for 3-5 minutes or until potatoes are tender
4.
Add
olive oil and onion to the skillet with the sweet potatoes.
5.
Saute,
stirring occasionally for 10 minutes with lid on.
6.
Uncover
and stir in garlic, and next 6 ingredients.
7.
Cook
and stir for about 4 minutes or until kale is wilted.
