TIKKA MASALA CHICKEN SOUP

INGREDIENTS:
2
tablespoons olive oil
1
onion,
3
garlic cloves minced
1/2-teaspoon
EACH cayenne pepper, turmeric, cinnamon, and smoked paprika
1
tablespoon Tandoori Masala
1
teaspoon ground ginger
2
cups chicken stock
1-(28
Oz) can diced tomatoes
1(14
Oz) can coconut milk
1
whole rotisserie chicken shredded
DIRECTIONS:
1.
Heat
the oil in a stock pot over medium-high heat.
2.
Add
onions and sauté for 4 minutes.
3.
Ad
garlic and sauté for 3 more minutes.
4.
Add
cayenne pepper and next 5 ingredients; sauté 3 minutes longer.
5.
Add
stock to the soup pot, tomatoes and coconut milk.
6.
Simmer
for 30 minutes.
7.
Using
an immersion blender, puree soup until smooth and creamy.
8.
Season
with salt and pepper and add shredded chicken.
