BUTTERNUT SQUASH PANCAKES by CHEF

12 pancakes
INGREDIENTS:

eggs
3
tablespoons melted butter
1-1/2-teaspoon
baking powder
1-teaspoon
cinnamon
1/8-teaspoon
nutmeg
1/2-cup
milk
2
cups self-rising flour
3/4-cup butternut squash ,roasted and mashed
3/4-cup butternut squash ,roasted and mashed
2
tablespoons pure maple syrup
DIRECTIONS:
1.
Whisk
together eggs and next 5 ingredients in a bowl.
2.
Add
flour and mix until batter is lumpy.
3.
In
a skillet sprayed with Pam heat over medium-heat when sizzling.
4.
Pour
1/4-cup batter into the skillet and flip then batter begins to bubble
5.
Or
until golden brown.
6.
Heat
up syrup and pour over the dish of pancakes.
7.

per dish.
