SHRIMP WITH CREAMY PESTO by

INGREDIENTS:
1/2-pound
Ronzoni pasta
1
tablespoon butter
1-tablespoon
all-purpose flour
1-(12.5
Oz) can coconut milk
1/2-cup
Parmesan cheese grated
Black
pepper to taste
1/2-cup
Lori’s pesto
1/2-pound
shrimp peeled and deveined
Fresh
basil leaves for garnish
DIRECTIONS:
1.
Cook
pasta according to package directions.
2.
Melt
butter in a skillet over medium-high heat when sizzling.
3.
Add
flour, stirring until no lumps remain, about 1 minute.
4.
Stir
in coconut milk, Parmesan, and black pepper.
5.
Cook
for 4-5 minutes or until slightly thickened.
6.
Stir
in Lori’s pesto, and shrimp, sauté until shrimp turn pink.
7.
About
5 minutes
8.
Serve
with hot Ronzoni pasta and fresh basil.
