WALNUT CRUSTED HOLE IN A BASKET by CHEF DAN:
Serves
4 (FOR GRANDSONS AT CHRISTMAS)
INGREDIENTS:
4
slices whole wheat bread
6
teaspoon olive oil, divided
4
tablespoon walnuts, finely chopped
4
eggs
3
pinches of cinnamon
DIRECTIONS:
1.
Using
a round cookie cutter, cut a hole out of the center of each piece of bread.
2.
Brush
with each slice with 1/2-teaspoons oil and dust with cinnamon.
3.
Press
1 tablespoon chopped walnuts onto the top surface of each piece of bread.
4.
Pressing
the walnuts down hard so they adhere to the bread.
5.
Heat
2 teaspoons oil to a skillet over medium-heat and when sizzling.
6.
Add
2 pieces of bread, walnut side down.
7.
Cook
for a few minutes or until toasted.
8.
Then
flip the bread over don’t worry if a few walnuts fall off, they will get
toasted in the skillet.
9.
Carefully
crack an egg into each hole.

Cover
the skillet with lid and cook for a few minutes or until whites are set and
yolks are cooked to desired firmness.

Remove
from skillet and sprinkle with a pinch of cinnamon.
