TURKEY BRINE MY WAY
by CHEF DAN:
1 turkey 18-20 pounds
INGREDIENTS:
3/4-cups salt
3/4-cup sugar
2 tablespoons EACH celery seeds, peppercorns, and coriander
seeds
1-teaspoon EACH dried thyme, red pepper flakes, and fennel
seeds
2-star anise
2 bay leaves
6 springs fresh rosemary
DIRECTIONS:
1. In
s stock pot, bring 2 gallons of water to a boil.
2. Add
salt and sugar to a boil and stir until completely dissolved.
3. Let
cool.
4. Then
pour all ingredients into a clean 5-gallon bucket.
5. Add
turkey and refrigerate for 24-48 hours.
6. Remove
from marinate, discard marinate.
