ROASTED BUTTERNUT SQUASH MASH ENJOY DAN:


             ROASTED BUTTERNUT SQUASH MASH by CHEF DAN:
Serves 4

INGREDIENTS:
1-butternut squash, halved and seeded
1-tablespoon olive oil
Salt and pepper to taste
2 tablespoon butter
Pinch of nutmeg, smoked paprika, and cayenne pepper
2 tablespoons fresh snipped chives

DIRECTIONS: (PREHEAT OVEN TO 450 F)
1.   Rub the butternut squash halve with olive oil.
2.   Season with salt and pepper.
3.   Roast cut-side down on a prepared baking sheet.
4.   Roast for 25 minutes or until tender.
5.   Remove from oven and let cool.
6.   When cool scoop out the flesh.
7.   Place in a bowl and mash with butter and a pinch of nutmeg, smoked paprika and cayenne pepper.
8.   Sprinkle with fresh chives.
