SWEET POTATO CASSEROLE ENJOY DAN:


                SWEET POTATO CASSEROLE by CHEF DAN:
Serves 8

INGREDIENTS:
3-pounds sweet potatoes, about 5
3/4-cup brown sugar-
1/3 cup butter
1 egg
1/2-teaspoons EACH vanilla extract and salt
1/2-cup finely chopped walnuts
1/4-teaspon cinnamon
Cooking spray
1 (10 ounce) bag mini mushrooms

DIRECTIONS: (PREHEAT OVEN TO 400 F) (then 350 f)
1.   Bake sweet potatoes for 1 hour or until tender.
2.   Reduce oven to 350 F.
3.   Let sweet potatoes cool and then peel skin off.
4.   Place peeled sweet potatoes in a bowl.
5.   Add brown sugar and next 5 ingredients.
6.   Place in a food processor and blend until smooth.
7.   Transfer sweet mixture to prepared baking dish.
8.   Bake for 30 minutes.
9.   Remove from oven and sprinkle marshmallow on top.
10  Return to the oven for 10 minutes.
