WILD ARCTIC CHAR WITH MUSHROOMS ENJOY DAN:


              WILD ARCTIC CHAR WITH MUSHROOMS by CHEF DAN:
Serves 4

INGREDIENTS:
4 (6 Oz) skinless arctic char fillets
kosher salt and freshly ground black pepper to taste
4 tablespoons olive oil
8 cremini mushrooms, sliced
2 shallots, finely chopped
2 tablespoons red wine vinegar
1/2-tablespoon garam Masala
1 tablespoon EACH chive, and parsley
2 bunches arugula

DIRECRIONS; (preheat oven to 350 f)
1.   Heat 1 tablespoon oil in a skillet over medium-high heat when sizzling.
2.   Add the fish and sear until golden brown on the bottom.
3.   Half way through turn and sauté for 3 minutes.
4.   Flip onto a prepared baking sheet and bake 3-5 minutes more.
5.   In a skillet add remaining oil over medium-high heat and when sizzling.
6.   Add mushrooms and cook, without stirring, until browned on one side.
7.   About 1 minutes, stir and sauté until browned on all sides 3-minutes.
8.   Add the shallots and sauté until soft, 2-3 minutes.
9.   Whisk in vinegar and garam Masala, and bring to a boil.
10  Remove from heat and stir in chives and parsley.
11  Drizzle the arugulas with oil and vinegar in a bowl.
12  Season with salt and pepper, and toss.
13  Divide among plates and serve with the fish.
14  Spoon the mushrooms and pan juices on top.
