ROASTED STRAWBERRIES WITH BITTERSWEET CHOCOLATE ENJOY DAN:


ROASTED STRAWBERRIES WITH BITTERSWEET CHOCOLATE by CHEF DAN:
Serves 6 with 1-1/4-cup sauce

ROASTED STRAWBERRIES:
1/2-cup honey
1/4-cup EACH balsamic vinegar, and dark red wine
1 teaspoon EACH ground cinnamon, and allspice
2 pounds strawberries, hulled

CHOCOLATE SAUCE:
3/4-cup heavy cream
3 tablespoons honey
1/2-teaspoon EACH smoked paprika, and instant espresso powder
1/8-teaspoon cayenne
Kosher salt to taste
1/2- cup bittersweet chocolate, finely chopped
1/2-teaspoon vanilla extract
2 tablespoons Grand Marnier

ROAS THE STRAWBERRIES: (PREHEAT OVEN TO 400 F)
1.   In a bowl, whisk together honey and next 3 ingredients until blended.
2.   Add the strawberries and stir gently to coat.
3.   Transfer to a prepared baking dish and roast for 10-12 minutes.

MAKE CHOCOLATE SAUCE:
1.   In a skillet, mix cream and the next 5 ingredients.
2.   Cook over medium-low heat until the edges begin to bubble.
3.   Remove skillet from the heat and add the chocolate strawberries.
4.   Let stand 1 minute then whisk until smooth.
5.   Whisk in the vanilla and Grand Marnier.
6.   Let cool to room temperature.
