HOW TO MAKE BERBERE (ETHIOPIAN SPICE BLEND) ENJOY DAN:


          HOW TO MAKE BERBERE (ETHIOPIAN SPICE BLEND) by CHEF DAN:
Makes 6 tablespoons

INGREDIENTS:
2 teaspoons coriander seeds
1 teaspoon cumin seeds
1/2easpoon fenugreek seeds
1 teaspoon black peppercorns
1 teaspoon whole allspice berries
Seeds of 4 green cardamom pods
5 dried red chilies, broken into small pieces
3 tablespoons sweet paprika
1 teaspoons salt
1/4-tespoon nutmeg
1/2-teaspoon ginger
1/4-teaspon cinnamon
1 teaspoons turmeric

DIRECTIONS:
1.   In a cast-iron skillet over high-heat.
2.   Toast the whole spices (seeds) and chilies shaking the pan to keep from scorching for about 2-3 minutes.
3.   Transfer to a spice grinder and let cool.
4.   When cool all remaining spices, salt and pepper and grind into a powder.
5.   Store in san airtight container in a dark place.
