THAI STYLE CROCK-POT CURRY ENJOY DAN:


                    THAI STYLE CROCK POT CURRY by CHEF DAN:
Serves 12

INGREDIENTS:
2 pounds, boneless, skinless chicken tenders
1 (19 Oz) Mae Ploy coconut milk
1 cup chicken broth
3 tablespoons palm sugar
3 tablespoon EACH soy sauce and fish sauce tamarind paste
3 tablespoon red curry paste
1 onion sliced
6 garlic cloves, smashed
1 lemongrass stalk, cut into 3-inch lengths and smashed
1 thumb-size fresh ginger grated
2 red bell peppers, chopped
3 sweet potatoes, cubed
1/2-eggplant, peeled and cut into chunks
2 tablespoons lime juice
2 Thai chili peppers
2 (8 Oz) packages rice noodles

DIRECTIONS:
1.   In the bowl of a crock pot combine coconut milk and next 6 ingredients
2.   Add onion and remaining ingredients plus chicken.
3.   Cook on high for 4-5 hours.
4.   Cook on low for 8-10 hours.
5.   Garnish with lime wedges, scallions, cilantro and basil.
