SIMPLE THAI VERMICELLI (RICE NOODLES) ENJOY DAN:

            SIMPLE THAI VERMICELLI (RICE NOODLES) by CHEF DAN:
Serves 4

INGREDIENTS:
1(8 Oz) package dried rice noodles
2 tablespoons olive oil
1 garlic clove, smashed
1 tablespoon EACH soy sauce, peanut butter, red curry paste, and sweet chili sauce
Salt and pepper to taste
1 scallion, bias cut into 1/2-inch lengths

DIRECTIONS:
1.   Place rice noodles in a bowl and pour hot boiling water over them.
2.   Let sit 20 minutes, drain, and set aside.
3.   Heat oil in a skillet over medium-heat and when sizzling.
4.   Saute garlic, for 1 minute.
5.   Stir in noodles, soy sauce and next 4 ingredients.
6.   Sprinkle to with scallions.


CURRY DAN:                SING SONGS AND EAT THAI FOOD!!
