MASHED POTATOES WITH HORSERADISH ENJOY DAN:

MASHED POTATOES WITH HORSERADISH by CHEF DAN:
Serves 8

INGREDIENTS:
8 Russet potatoes, peeled and quarter
4 tablespoons butter, divided
Seasoned black pepper to taste
1/2-cup Mexican sour cream
4 tablespoons horseradish
2 garlic cloves, smashed
1 tablespoon fresh snipped chives

DIRECTIONS:
1.   Bring a pot of salted water to a boil.
2.   Add potatoes and cook until tender, about 15-20 minutes.
3.   Drain and mash with 2 tablespoons butter and black pepper.
4.   Stir in sour cream, horseradish, garlic, and chives.
5.   Whip potatoes and place in a bowl.
6.   Melt remaining butter and pour over the potatoes.
