TOASTED FREGOLA ENJOY DAN:


                             TOASTED FREGOLA by CHEF DAN:
Serves 2

INGREDIENTSS:
1-cup Toasted Fregola (Semolina Pasta made from hard grain)
8-cherrt tomatoes, halved
1-garlic clove, smashed
1-onion, chopped
tablespoons olive oil
1-handful fresh parsley
4-cups vegetables stock
salt
3-tablespoons grated Parmigiana Reggiano cheese

DIRECTIONS:
1.   Add oil to a skillet over medium-heat heat & when sizzling.
2.   Add onion, garlic & parsley, sauté for 4 minutes.
3.   Add tomatoes, sprinkle with salt, cover & cook 10 minutes.
4.   Slowly add water & stir, when comes to a boil.
5.   Pour in Toasted Fregola, continue cooking 10-12 minutes.
6.   When cooked flavor it with Parmigiana cheese.
7.   Transfer to serving platter.
