SWEET POTATO COCONUT CURRY ENJOY DAN:


               SWEET POTATO COCONUT CURRY by CHEF DAN:
Serves 4

INGREDIENTS:
1-1/2-teaspoon coconut oil  
1-onion, dices
1-cup black lentils
2-sweet potatoes, cut into 1-inch cubes
1-multicolored carrot, sliced lengthwise & chopped
1/2-teaspoon EACH ground turmeric, mustard seeds, & cumin seeds
1-tablespoon Tandoori Masala or curry powder
1-teaspoon ginger powder
1/2-teaspoon salt
Freshly ground black pepper
4-cup vegetables broth
1-cup coconut milk

DIRECTIONS:
1.   Heat oil in a stock pot over medium heat & when sizzling.
2.   Add onion & sauté for 4 minutes.
3.   Add lentils & next 7 ingredients, stir to combine everything.
4.   Add broth & bring to a boil.
5.   Reduce heat & simmer for 25 minutes.
6.   Stir in coconut milk.
7.   Season with salt & pepper.
8.   Serve with quinoa.
