MOM'S SCRAMBLED EGGS WITH ZUCCHINI ENJOY DAN:


                  MOM’S SCRAMBLED EGGS WITH ZUCCHINI by CHEF DAN:
Serves 4

INGREDIENTS:
1-cup shredded zucchini
1-tablespoon olive oil
1-garlic clove, minced
salt & pepper to taste
1/2-teaspoon Colombo curry
4-eggs
1/4-cup grated Parmigiano-Reggiano cheese
2-scallions bias sliced into 1/2-inch slices

DIRECTIONS:
1.   Heat the oil in a skillet over medium heat & when sizzling.
2.   Add the zucchini & cook, stirring often, until it starts to brown.
3.   Takes about 3 minutes.
4.   Add garlic & sauté for 1 more minute.
5.   Season with salt & pepper.
6.   Beat the egg in a bowl & add to the skillet.
7.   Cook, stirring every few seconds until eggs are scrambled.
8.   Sprinkle on cheese & stir in.
9.   Remove from heat & serve with cherry tomatoes.
10  Garnish with sliced scallions.
