PANCAKES MY WAY by

INGREDIENTS:
3-tablespoons
butter, softened + 5 more tablespoons, cut into in cubes & chilled
1-1/2-cups
buttermilk
1-1/2-cups
milk
3-cups
all-purpose flour
1/4-cup
sugar
1-tablespoon
baking powder
1-teaspoon
baking soda
1/2--teaspoon
salt
3/4-cup
mint chocolate chips
DIRECTIONS:
(PREHEAT OVEN TO 450 F)
1.
Pour
1-tablespoon softened butter on to a sheet pan; then line with parchment paper.

Set
aside.
3.
Combine
buttermilk & milk, set aside.
4.
In
a food processor, add flour & next 4 ingredients.
5.
Blend
until combined, about 30 seconds.
6.
Sprinkle
the chilled butter cubes on top & pulse the mixture until the butter is
coarse & sandy.
7.
Transfer
the mixture to a bowl & pour the buttermilk mixture on top.
8.
Whisk
to combine, let stand 5 minutes.
9.
Place
the prepared baking sheet in the oven to heat as batter sits.

Remove
hot pan & add 2 tablespoons softened butter to the pan.

Return
to the oven until butter is melted, about 1 minute.

Remove
pan & carefully tip to spread melted butter around.

Stir
in risen batter & pour it into the center of the pan.

Tipping
again to spread the batter evenly.

Sprinkle
on chocolate chips evenly over the batter.

Return
pan to the & cook for 13-15 minutes.

Broil
until tops turn golden brown, 1-2- minutes.

Let
cool slightly & then cut into squares.

Top
with pure maple syrup, or jam.
