BULDAK KOREAN FIRE CHICKEN

Serves
4 (DR. YOON FAVORITE DISH)
CHICKEN:
2-boneless,
skinless, chicken breast or 4 chicken thighs, cut into bite -size pieces
4-Thai
chili, chopped
4-garlic cloves, finely chopped
2-tablespoons
sake
1-tablespoon
sugar
FIRE
SAUCE:
2-1/2-tablespoons
Gochujang
4-tablespoons
Gochugaru (red pepper flakes)
2-teaspoons
karashi mustard
2-teaspoons
Capsaicin powder (ground up chili peppers)
2-tablespoon
EACH sugar soy sauce & chicken stock
COOKING
AND GARNISH:
2-tablespoons
toasted sesame oil
1-teaspoon
olive oil
1-onion,
diced
1-1/2-cups
shredded mozzarella
2-scallions,
bias slice into 1/2-inch slices
1/2-teaspoon
toasted sesame seeds
DIRECTIONS:
1.
In
a mixing bowl, combine all ingredients for chicken.
2.
Mix
well set aside.
3.
In
another mixing bowl, combine all ingredients fire sauce.
4.
Mix
well set aside.
5.
Heat
sesame oil in a skillet over high heat & when sizzling.
6.
Add
marinated chicken & cook about 3 minutes on each side.
7.
Add
all sauce & stir everything
together.
8.
When
it is combined well, drizzle with olive oil

Remove
from heat.

Melt
mozzarella for 2 minutes in the microwave or double boiler.

Transfer
fire chicken on a serving plate & pour melted cheese.

Garnish
with scallion, & toasted sesame seeds.
