PAN SEARED HALIBUT WITH PEA
SAUCE by CHEF DAN:
Serves

INGREDIENTS:
1-cup
thawed frozen green peas
1-1/2-tablespoon
fresh oregano
1-shallot,
diced
2-
tablespoons EACH chopped, capers, lime juice, & olive oil
1/4-teaspoon
EACH crushed red pepper, salt & pepper
4
(6 Oz) halibut fillets
1-tablespoon
olive oil
DIRECTIONS:
1.
Combine
peas & next 6 ingredients together.
2.
Sprinkle
salt over fillets.
3.
heat
1 tablespoon oil in skillet over medium-high & when sizzling.
4.
Cook
halibut 4 minutes per side.
5.
Top
with freshly ground black pepper.
