PUERTO RICAN BEEF MOFONGO by

Serves

INGREDIENTS:
1-pound
ground beef
1
onion, chopped
1-bell
pepper, chopped
1/4-cup
packed cilantro leaves
6-gatlic
cloves, divided
1-teaspoon
EACH coriander, & creole seasoning
1-(15.5
Oz) can black beans, rinsed, drained
1-(14-5
Oz) can fire-roasted tomatoes, undrained
1/2-cup
sliced green olives with pimentos
4-ripe
plantains, peeled, cut into 1-inch chunks
2-teaspoon
salt
DIRECTIONS:
1.
Combine
onion, pepper, 2 garlic cloves & cilantro in a blender.
2.
Process
until finely chopped.
3.
Heat
a skillet over medium heat & when hot.
4.
Add
ground beef & vegetables mixture, cook 8-10 minutes.
5.
Stirring
& breaking beef into chunks.
6.
Stir
in black beans, tomatoes, olives & season mix.
7.
Bring
to a boil:

Cover
reduce heat & simmer for 20 minutes, stirring occasionally.

Place
plantains, remaining 4 garlic cloves & salt in a skillet.

Cover
with water.

Cover
& bring to a boil, then simmer for 35-40 minutes.

Remove
from heat; reserving cooking liquid.

Mash
plantains & garlic, adding coking liquid to create a soft, chunky mixture.

Divide
plantain mixture evenly onto 4 plates.

Top
evenly with beef mixture.
