RICOTTA TOAST WITH PEACHES ENJOY DAN:


                 RICOTTA TOAST WITH PEACHES by CHEF DAN:
Serves 4

INGREDIENTS:
3-tablespoon pine nuts, toasted
4-slices crusty, whole grain bread
3/4-cup ricotta cheese
1-ripe peach pitted & sliced
2-teaspoons EACH honey & sumac
1-teaspoons fresh thyme
salt & freshly ground black pepper as needed

DIRECTIONS:
1.   In a cast-iron dry skillet toast the pine nuts until slightly browned.
2.   Transfer to a cutting board to cool, then finely chop.
3.   Toast the bread.
4.   Spread 3-tablespoons ricotta over each piece of toast.
5.   Arrange 3-4 peach slices on top of the toast.
6.   Mix honey & sumac.
7.   Drizzle 1/2-teaspoon honey mixture on each piece of toast.
8.   Then sprinkle about 2-teqspoon toasted pine nuts.
9.   Then sprinkle with thyme & salt.
10  Cut in half & serve.
