LEMON WHIPPED FETA ENJOY DAN:


                          LEMON WHIPPED FETA BY CHEF DAN:
Serves 8

INGREDIENTS:
1-1/2-lemons
1-bunch scallions, trimmed & halved crosswise 2 cut into 1-inche pieces
6-tablesoiibs olive oil
2-1/2-cups feta cheese, broken into pieces
1/4--teaspoon EACH black pepper, cayenne, & turmeric
1-tablespoon hot water

DIRECTIONS:
1.   Heat a broiler & line a sheet pan with foil.
2.   Juice 1 lemon to get 3 tablespoon juice, set aside.
3.   Cut the remaining 1/2-lemon into 4 thin slices.
4.   In a bowl toss together lemon slices, scallions, & 1 tablespoon oil.
5.   Place on prepared sheet pan & broil until blackened.
6.   Tossing occasionally for 10-12 minutes.
7.   Transfer to a cutting board to cool.
8.   In a food processor, add feta, cream cheese, remaining oil, reserved lemon juice, black pepper, & next 3 ingredients.
9.   Puree until very smooth, then add almost all the scallions (save 2 scallions for garnish)
10  Pulse to combine, leaving some chunky scallions pieces.
11  Transfer to a bowl, then garnish charred lemon slices chopped scallions
