G & M KNIGHT SEARED SCALLOPS ENJOY DAN:


                    G & M-KNIGHT SEARED SCALLOPS by CHEF DAN:
Serves 4

INGREDIENTS:
1-pound scallops
1-tablespoon olive oil
1-tabablespoon butter
salt & fresh ground pepper to taste

GARLIC BUTTER:
2-tablespoons butter
1-garlic clove minced

Serve with lemon wedges:

DIRECTIONS:
1.   ensure scallops are thawed & pat dry with paper towel.
2.   Season with salt & pepper.
3.   Heat butter & oil in a skillet over high heat.
4.   When butter starts to smoke place scallops in skillet & cook for 90 seconds.
5.   Flip & cook for about 60 seconds longer or until brown crust forms.

GARLIC BUTTER:
1.   In another skillet melt butter, over medium heat & when sizzling.
2.   add garlic cook for about 1 minute.
3.   Turn off heat.
SERVING:
1.   Brush garlic butter over scallops& squeeze juice from lemon wedge.
