SOMEN NOODLE
SOUP by CHEF DAN:
Serves
2
INGREDIENTS:
2-bundles
somen noodles
4-cups
dashi (recipe to follow)
2-tablespoon
EACH mirin, & soy sauce
1/2-tablespoon
oyster sauce
2-scallions,
bias sliced into 1/2-inch slices
1/2-teaspoon
salt
DIRECTIONS;
1.
Boil
somen noodles in a pot, in dashi broth.
2.
Simmer
uncovered for about 2 minutes.
3.
Drain
& wash the noodles in water.
4.
Set
aside.
5.
Put
dashi soup pot to a boil.
6.
Add
mirin, soy sauce & oyster sauce.
7.
Put
boiled somen in the soup and bring to a boil.
8.
Remove
from heat.
9.
Sprinkle
on sliced scallions;
DASHI:
4-cups
water
3-inches
dried kelp, torn into pieces
1/2-dried
shiitake mushrooms
DIRECTIONS:
Bring
to a simmer, & simmer 10 minutes, (but do not boil).
Drain
& reserve broth.
Remove
dashi &mushrooms.
ENJOY
