FIRECRACKER SHRIMP ENJOY DAN:


                         FIRECRACKER SHRIMP by CHEF DAN:
Serves 6

 INGREDIENTS:
3-garlic cloves, minced
2-teaspoons soy sauce
1-teaspoon hoisin sauce
1/2-pure maple syrup
1-orange zested into thin stripes
2-tablespoons orange juice
½-teaspoon red pepper flacks
2-pound shrimp, peeled & deveined
1-cup cornstarch
1/4-cup grape seed oil
 scallions for garnish
sesame seeds, toasted for garnish

DIRECTIONS:
1.   Add the garlic & next 6- ingredients in a bowl.
2.   Whisk until combined.
3.   Set aside.
4.   Add the shrimp to the cornstarch & coat well.
5.   Heat your oil in skillet over medium-high heat.
6.   In batches, cook the shrimp for 2-3 minutes or until brown & crisp.
7.   Drain onto a plate.
8.   Drain the oil.
9.   Add the sauce back into the skillet & add the shrimp on top.
10  Toss to combine & cook about 20 seconds or until sauce has thickened.
11  Garnish with scallions & toasted sesame seeds.
