POLENTA IN THE XL PRESSURE COOKER ENJOY DAN:

             POLENTA IN THE XL PRESSURE COOKER by CHEF DAN:
Serves 4-6

INGREDIENTS:
1 cup polenta (not quick cooking)
4 cups vegetable broth
3 tablespoons butter
1/2-cup Mexican blend shredded cheese
Kosher salt and freshly ground black pepper to taste

DIRECTIONS:
1.   Place the inner pot into the Power Cooker.
2.   Press RICE/RISOTTO button.
3.   Add the butter and heat the butter.
4.   Add the polenta and coat with the butter.
5.   Add the remaining ingredients.
6.   Place the lid on the Power Cooker, lock the lid.
7.   Switch the pressure release value to closed.
8.   Pres WARM/CANCEL button.
9.   Press the RICE/RISOTTO button.
10.                Once the time reaches 0 the cook will automatically switch to KEEP/WARM.
11.                Switch the pressure release value to open.
12.                When the steam is completely released remove lid.
