ROASTED PORK LOIN WITH CHUTNEY GLAZE ENJOY DAN:

    ROASTED PORK LOIN WITH CHUTNEY CIDER GLAZE by CHEF DAN:
Serves 4-6

INGREDIENTS:
3 pound pork loin, trimmed
1/2-cup hard cider
1/2-teaspoon sea salt
2 tablespoon olive oil
1 tablespoon EACH dried basil and dried thyme
1 tablespoon lemon juice
1 (12 Oz) bottle REEDS Original Ginger Brew
1/4-cup Major Gray’s Chutney
1 tablespoon brandy

DIRECTIONS:     (PRE-HEAT OVEN TO 475-then 350 DEGREES)
1.   Place pork in a roasting pan.
2.   In a bowl, combine all ingredients except hard cider.
3.   Rub the mixture over the pork, cover and marinate for 1 hour.
4.   Pour off and reserve the marinate.
5.   Add the hard cider to the pan.
6.   Place in pre-heated oven and roast for 475 for 20 minutes.
7.   Reduce heat to 350 degrees and roast an additional 30 minutes.
8.   Baste occasionally with the marinate mixture.
9.   Roast until internal temperature is 145 degrees.
