SESAME PEANUT NOODLES ENJOY DAN:

                      SESAME PEANUT NOODLES by CHEF DAN:
Serves 4

INGREDIENTS:
1 (8 Oz) package of udon noodles
3 tablespoon sesame seeds
3 teaspoons sesame oil
6 springs of fresh cilantro
2/3-cup peanut butter, heated in the microwave to make soft
3 tablespoon soy sauce
1 tablespoon fish sauce
1 tablespoon Sriracha
2 tablespoons rice wine vinegar
1 thumb-size fresh ginger, finely chopped
2 garlic cloves, peeled and smashed
2 tablespoon honey
3 scallions, bias-sliced into 1/2-inch lengths
1 red bell pepper, seeded and sliced into 1/2-inch strips
1/2-English cucumber thinly sliced crosswise.

DIRECTIONS:
1.   Cook udon according to package directions.
2.   When the udon is cooked, drain them through a colander and rinse under cold water.
3.   Transfer noodles to a bowl and drizzle 1 teaspoon sesame oil on the noodles and toss to coat.
4.   Set aside.
5.   Place 2 teaspoon sesame oil, cilantro, peanut butter soy sauce, fish sauce, Sriracha, wine vinegar, ginger, garlic, and honey.
6.   Place in a blender and blend until smooth, adding water if two thick.
7.   Leave sauce in the blender.
8.   Add scallion, bell pepper, and cucumber to the bowl with the noodles.
9.   Pour peanut sauce over the top.
10.                Toss well to combine and top with sesame seeds.
