CHICKEN PHO WITH GIA VI NAU PHO BAC SEASONING ENJOY DAN:

CHICKEN PHO WITH GIA VI NAU PHO BAC SEASONING by CHEF DAN:
Serves 6   (IN THE CROCK-POT)

INGREDIENTS:
1-(1.5 Oz) bag Gia Vi Nau Pho Bac spice seasoning
8 cups chicken broth
2 tablespoon EACH brown sugar and fish sauce
4 whole cloves
1 thumb-size fresh ginger, peeled and thinly sliced
2 bone-in chicken breasts, skin removed, trimmed
6 ounces wide rice noodles
4 bok choy, chopped
2 cups bean sprouts
2 cups fresh basil leaves
1 Serrano pepper, thinly sliced
1 cup fresh mint leaves
1 lime cut into 6 wedges.

DIRECTIONS:
1.   Combine broth, spice seasoning, brown sugar, fish sauce, cloves, and ginger.
2.   Place in a crock-pot.
3.   Add chicken breasts, meat side down.
4.   Cover and cook on high for 4 hours, on low for 8 hours.
5.   Transfer chicken to a cutting board.
6.   Remove spices and discard.
7.   Add noodles and bok choy to the crock-pot.
8.   Cover and cook on high for 30 minutes.
9.   Remove chicken from the bone and shred with 2 forks.
10.                When noodles are tender, stir in the shredded chicken.
11.                Serve bowls of soup with bean sprouts, basil leaves, sliced chili, mint leaves, and lime wedges, or on the side so everyone can add their own toppings.
