CITRUS OVEN ROASTED CHICKEN BREASTS ENJOY DAN:

         CITRUS OVEN ROASTED CHICKEN BREASTS by CHEF DAN:
Serves 4

INGREDIENTS:
3 tablespoon olive oil
3 garlic cloves, minced
1 tablespoon sugar
1 whole lemon, juiced and sliced
1 orange, juiced and sliced
1 tablespoons Herb de Province
1/2-teaspoon smoked paprika
1/4-teaspoon red pepper flakes
Sea salt and freshly ground black pepper to taste
4 boneless skinless chicken breast
1/2-shallot, finely chopped
1-teaspoon EACH fried thyme and rosemary
1 tablespoon fresh tarragon

DIRECTIONS:   (PRE-HEAT OVEN TO 400 DEGREES)
1.   Whisk together olive oil, sugar, lemon juice, Herb de Province, paprika, red pepper flakes, and season with salt and pepper.
2.   Place chicken and olive oil mixture in zip-lock bag.
3.   Marinate for several hours or overnight.
4.   Remove from marinate; reserving marinate.
5.   Place chicken in a 13 X 9-inch baking dish.
6.   Pour marinate mixture all over the chicken, turn to coat all sides.
7.   Arrange slices of lemon, orange and shallot over the chicken.
8.   Sprinkle generously with thyme, rosemary and salt and pepper.
9.   Bake in pre-heated oven for about 40-45 minutes.
10.                Sprinkle with fresh tarragon.
