VEGAN RED CURRY PASTE ENJOY DAN:

     HOW TO MAKE VEGAN RED CURRY PASTE by CHEF DAN:
Makes 1/2-cup

INGREDIENTS:
1 tablespoon cilantro roots
1 tablespoon coriander seeds
1-tablespoon cumin, seeds
4 whole dried chilies
2-4-inch pieces of lemongrass, squashed and finely cut
1-inch of fresh ginger, minced
4 garlic cloves
2 shallots, finely chopped
1 tablespoon lime juice
 1/2-tablespoon fresh ground black pepper
1 tablespoon salt


DIRECTIONS:
1.   Soak the chili peppers in warm water for 12-15 minutes, reserving some water.
2.   When they are soft, remove the stem, and seeds.
3.   In a dry skillet over medium-heat seeds and roast seeds stirring constantly, about 1 minute.
4.   When cool add to a spice grinder and grind the seeds until fine.
5.   Zest 2 limes.
6.   Peel garlic and shallots.
7.   In a blender place cilantro roots, peppers and some pepper water, zest, lemongrass, ginger, garlic, shallots, seeds, lime juice, salt and pepper, pulse until smooth.
