BRISKET WITH COKE COLA AND SMOKE ENJOY DAN:

         ATLANTA BRISKET IN THE CROCK POT by CHEF DAN:
Serves 10-12

INGREDIENTS:
5 pounds fresh beef brisket, trimmed of excess fat
2 onions, sliced
1 can of regular Coke Cola
1-1/2-cups ketchup
1 packet dry onion soup mix
1-teaspoon liquid smoke
1 tablespoon olive oil
Kosher salt and freshly ground black pepper to taste

 DRY RUB:
1 tablespoon dried thyme leaves
1 tablespoon smoked paprika
1/2- teaspoon each cumin cayenne onion powder, and garlic powder
Salt and pepper to taste

DIRECTIONS:

1.   Combine Coke Cola and Ketchup.
2.   Place roast in a Dutch oven; add Coke Cola and ketchup.
3.   Marinate overnight in the refrigerate, turning a few times.
4.   Take out of the crock–pot and pat dry.
5.   In a bowl combine dry ingredients.
6.   In another bowl combine liquid smoke and olive oil.
7.   Rub the roast, with the smoke, olive oil mixture.
8.   Rub the roast with the dry rub.
9.   Add sliced onions to the bottom of the crock-pot.
10.                Add Coke Cola, Ketchup mixture.
11.                Place brisket in the crock-pot
12.                 Place the dry onion mix over the top of the meat.
13.                Cook on low for 8-10 hours.
