WOW!!!!!!! SPICY SHRIMP ENJOY DAN:


                       SWEET AND SPICY SHRIMP by CHEF DAN:
Serves 6

INGREDIENTS:

2 pounds uncooked shrimp, peeled and deveined
1/4-cup soy sauce
2 tablespoons sesame oil
1/2-cup orange juice, (frozen, concentrate thawed)
1/2-cup MAE PLOY sweet chili sauce
2 teaspoon oyster sauce
2 teaspoon rice wine vinegar
1 thumb-size fresh ginger, minced
3 scallions cut on the bias in 1-inch pieces

DIRECTIONS:

1.     Mix shrimp, and next 7 ingredients together in a bowl.
2.     In a skillet over high-heat add I tablespoon sesame oil, and when sizzling.
3.     Add onion and ginger, sauté for about 2 minutes.
4.     Add shrimp mixture.
5.     Toss just until shrimp are opaque, about 2 minutes.
6.     Using slotted spoon transfer shrimp to a platter.
7.     Cook sauce until thickened, about 2 minutes.
8.     Spoon over shrimp.
9.     Serve with jasmine rice.
