CHICKEN SAUSAGE WITH ROASTED RED PEPPER ND SPINACH
                                                                                By CHEF DAN:
Serves 2

INGREDIENTS:

2 sausages from the Casual Gourmet Red Roasted Red Pepper& Spinach Sausage, sliced, sold at Costco
1 cup baby portabella mushrooms
2 tablespoon fresh fennel, thinly sliced
1 tablespoon butter
1/2-onion, diced
2 cloves garlic, minced
1/4-cup feta cheese

DIRECTIONS:

1.     In a sauce pan add butter and over medium-heat add mushroom, onion, garlic, fennel, and cook for 4-5 minutes.
2.     Toss in the sliced sausage and cook another 5 minutes.
3.     Take off heat.
4.     Stir in feta cheese.
5.     Garnish with fennel fronds.
