                              BLUE BERRY MUFFINS by CHEF DAN

12 muffins



INGREDIENTS:



2 cups whole-wheat flour

1-1/2 teaspoon baking powder

1 teaspoons baking soda

2 ripe bananas

2 cups blueberries

1-1/2-teaspoons vanilla extract

1-1/2-teaspoon cinnamon

1/8 teaspoons sea salt

1/2-cup brown sugar

1-1/2-cups buttermilk

1 egg, lightly beaten

1/4-cup grape-seed oil OR 1/4-cup softened butter



TOPPING:

1 tablespoon brown sugar

1/4-teaspoon ground nutmeg

1/4-cup almonds, chopped



DIRECTIONS:            (PRE-HEAT OVEN TO 375 DEGREES)



1.    Peel the bananas and mash in a bowl with a fork.

2.    Mix flour, baking powder, baking soda, cinnamon, brown sugar, and salt together in mixing bowl.

3.    Mix well to combine.

4.    Make a well in the center and add buttermilk, egg, grape-seed oil, vanilla extract and mashed bananas.

5.    Fold the ingredients together until just incorporated.

6.    Gently stir in the blueberries.

7.    Spoon the batter into greased muffin cups 2/3s full.

8.    Mix topping ingredients together.

9.    Sprinkle topping mixture on top of the muffins.

10. Bake at 375 for 20-25 minutes.

11. Cool in pan for 10 minutes before removing to a rack.
