GOT A BAG OF ONIONS FROM THE FOOD BANK SOOOOOOOOOO ONION SOUP ENJOY DAN:


      CARAMELIZED ONION SOUP FOR THE SOUP KITCHEN by CHEF DAN:
Serves 20-30

 INGREDIENTS:

8 onions, thinly sliced
15 cups beef broth
10 cups water
1/2-cup white sugar
1-cup butter
6 garlic cloves, minced
1/2-cup flour
1/4-cup Worcestershire sauce
1/2-cup dry sherry
1 tablespoon dried thyme
5 day old French baguettes
2 pounds sliced Swiss cheese
Salt and pepper to taste

DIRECTIONS:      (PRE-HEAT OVEN TO 325 DEGREES)

1.      Melt butter in a stock pot over medium-heat.
2.      Add onions and sugar, stirring constantly, for about 10 minutes.
3.      Stir in flour and cook until well balanced with onions and pan juices.
4.      Add water, broth, thyme, and sherry, and Worcestershire sauce, heat to boiling, about 10 minutes.
5.      Salt and pepper to taste
6.      Cover and turn to low and simmer for about 10 minutes...
7.      Cut French bread into 1/2 slices.
8.      Layer each slice of bread with Swiss cheese and place on baking sheet, in pre-heated oven and bake until cheese has melted.
9.      Ladle soup into bowl and place one slice of bread on top of the soup
