WOW A SALAD WITH A KICK ENJOY DAN:


CHICKEN-HOMINY SALAD WITH A KICK by CHEF DAN:
Serves 2-4

INGREDIENTS:

4 skinless chicken breasts, tenders
1 tablespoon garlic oil
2 tablespoon rosemary oil,
1 (29oz) can hominy (chickpeas or garbanzo beans)
1 onion, diced
2 garlic cloves, minced
1 thumb-size fresh ginger, minced
1 teaspoons cumin
1/2-teaspoon sea salt
1/2-teaspoon cayenne pepper
1 cup plain yogurt
1 tablespoon curry powder
1 bell pepper, chopped
3 tablespoon lemon juice, divided
3 cups fresh spinach
1 head romaine lettuce
2 jalapeno pepper, seeded and minced
A hand full fresh cilantro, chopped
A bunch fresh mint, chopped

DIRECTIONS:

1.    Combine in a bowl; add the chicken, ginger, garlic, cumin, salt and cayenne pepper.
2.    Chill for 1 hour.
3.    Combine in bowl hominy, yogurt, curry powder, bell pepper, 1 tablespoon lemon juice, jalapeno peppers, and onion.
4.    Sauté marinated chicken strips in 1 tablespoon garlic oil and cook over medium-heat for about 15 minutes.
5.    Chill the cooked chicken.
6.    Toss together the spinach and romaine.
7.    Toss in the cooked chicken and hominy mixture.
8.    Through in the fresh cilantro and mint.
9.    Drizzle with remaining lemon juice and 2 tablespoon rosemary oil.
