MINESTRONE SOUP FOR THE SOUP KITCHEN ENJOY DAN:


MINESTRONE SOUP WITH FUNNY BUNNY PASTA by CHEF DAN:
Serves 20-30

INGREDIENTS:

5 pounds ground beef
2 tablespoons olive oil
3 onion, chopped
5 carrots, slivered
4 celery ribs, diced
1 (14oz) can green beans
1 (48oz) can diced tomatoes
1 (28oz) can pasta sauce
2 cups cooked red kidney beans
2 cups cooked navy beans
1 (28oz) can V8 juice
12 cups beef stock
1 tablespoon EACH oregano, basil, and thyme
2 (15oz) package Funny Bunny pasta

DIRECTIONS:

1.      Sauté beef in oil in a stock pot over medium-heat until nice and brown.
2.      Add onion, carrots, celery, green beans, and tomatoes and simmer for about 15 minutes.
3.      Add cooked kidney and navy beans to the pot.
4.      Add beef stock, oregano, basil, basil, and thyme.
5.      Add pasta sauce, and noodles.
6.      Bring to a boil and then simmer for about 45 minutes.
