HOMINY-CHICKPEA-GORBANZO WHATEVER IT MAKES A NICE SALAD ENJOY DAN:


CHICKEN-HOMINY SALAD WITH A KICK FOR THE KATZAKIAN PARTY by CHEF DAN:
Serves 4-6

INGREDIENTS:

6 skinless chicken breasts, tenders
2 tablespoon garlic oil
2 tablespoon rosemary oil,
1 (29oz) can hominy (chickpeas or garbanzo beans)
1 onion, diced
2 garlic cloves, minced
1 thumb-size fresh ginger, minced
2 teaspoons cumin
1/2-teaspoon sea salt
1-teaspoon cayenne pepper
2 cup plain yogurt
2 tablespoon curry powder
12bell pepper, chopped
1/4 cup lemon juice, divided
3 cups fresh spinach
1 head romaine lettuce
2 jalapeno pepper, seeded and minced
A hand full fresh cilantro, chopped
A bunch fresh mint, chopped

DIRECTIONS:

1.    Combine in a bowl; add the chicken, ginger, garlic, cumin, salt and cayenne pepper.
2.    Chill for 1 hour.
3.    Combine in bowl hominy, yogurt, curry powder, bell pepper, 2 tablespoons lemon juice, jalapeno peppers, and onion.
4.    Sauté marinated chicken strips in 2 tablespoon garlic oil and cook over medium-heat for about 15 minutes.
5.    Chill the cooked chicken.
6.    Toss together the spinach and romaine.
7.    Through in the fresh cilantro and mint.
8.    Drizzle with remaining lemon juice and 2 tablespoon rosemary oil.
9.    Serve green salad with a portion of the hominy and chicken.
