INGREDIENTS;
1
cup lentils
1/2-red
onion, finely chopped
3
cups water
1
tablespoon berbere spice
1/4-teasspoon
EACH turmeric, garlic powder, ginger powder, and cumin
1/2-teaspoon
EACH cardamom, and fenugreek
2
garlic cloves, minced
3
tablespoons olive oi
1/4-teaspoon
EACH cinnamon and cayenne powder
1/4-teaspoon
sea salt
DIRECTIONS:
1.
Rinse
lentils in hot water until the water runs clear.
2.
Transfer
to a bowl covered with water; let soak for 20 minutes.
3.
In
soup pot add onions and sauté for 4 minutes.
4.
Stir
in a 1/2-cup water; cover and cook until water evaporates 5 minutes.
5.
Add
1/3cup water and cook until onions are
soft and translucent another 4 minutes.
6.
Stir
in berbere and cook stirring until a thick paste about 1 minute.
7.
Stir
in turmeric and next 5 ingredients and sauté for 1-2 minutes.
8.
Stir
in garlic and sauté stirring for 1 minute.
9.
If
sauce is to dry pure in1/4-cup water.

Stir
in lentils and oil and cook 2 minutes.

Pour
the remaining 2-1/3-cups of warm water; bring to a simmer.

Cook
stirring frequently, until the lentils are tender about 20 minutes.
