GOMEN
(ETHIOPIAN STYLE COLLARD GREENS) by CHEF DAN:
Serves

INGREDIENTS:
2
bunches collard greens, stemmed and finely chopped
1/2-onion,
finely chopped
2
tablespoon vegetable broth
3
tablespoon olive oil
2
garlic cloves, minced
1
tomato, finely chopped
1
jalapeno pepper, sliced
1-teaspoon
EACH black sesame seeds, cumin seeds and ground cardamom
1/4-teaspoond
sea salt
DIRECTIONS:
1.
Bring
a pot of water to boil over high-heat.
2.
Add
collard greens and cook for 15 minutes.
3.
Drain
well in a colander.
4.
Add
onion and 2 tablespoon vegetable broth to the pot and cook over medium-heat for
4-5 minutes.
5.
Add
oil and garlic and sauté for1 minute.
6.
Add
tomatoes and jalapeno; cook stirring a few times for 5 minutes.
7.
Stir
in greens, cover and cook stirring once or twice for10 minutes.
8.
Reduce
heat to medium-low.
9.
Stir
in black sesame seeds, cumin, and cardamom.

Cover
and cook 3 minutes.

Stir
in salt.
