SNAP PEAS WITH CUCUMBER by CHEF DAN:
Serves 4
INGREDIENTS:
1 pound raw snap peas, large ones halved, cut on the bias
1 tablespoons toasted sesame oil
1 cucumber
1 bunch of radishes
1 red bell pepper, diced
2 tablespoons seasoned rice vinegar
1 teaspoon Dijon mustard
1 teaspoon red chili flakes
2 teaspoon black sesame seeds
DIRECTIONS:
1. Cut cucumber, radishes cross-wise into 1/4-inch slices.
2. Toss peas, cucumber, radishes, bell pepper, Dijon mustard, red chili flakes with rice vinegar into a bowl.
3. Top with black sesame seeds.
4. Season with salt and pepper.
